1 large spaghetti squash
4 hot Italian turkey sausages (casing removed)
1-14 oz. can diced tomatoes
1/2 yellow onion, diced
2 large garlic cloves, diced
4oz feta cheese
2TBS Parmesan cheese
Cut squash in half, drizzle with olive oil bake face down on a foil lined baking sheet at 400 for 40 minutes.
Brown onion then add sausage and garlic until the sausage is cooked and browned. Add the tomatoes, salt and pepper.
When squash is cooked, fork out the inners into a bowl. Mix with meat sauce. Add feta, Parmesan, fresh parsley and fresh basil. Stir.
Spoon back into shells. Top with Mozzarella. Bake an additional 20 minutes.
